Banana cupcakes
Ingredients
- 2 ripe bananas
- 1/2 cup plain flour
- 1/2 cup white sugar
- 2 eggs
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 50g unsalted butter
- 1 tsp vanilla extract
I only recently started baking. Previously, I was never keen on baking because it requires precise measurements. And as a cook, I usually add to taste. Plus in Thailand, I never had an oven at home. Most people there don’t cook with ovens.

Its not like in England, where the oven is important and people use it all of the time. Everyone and anyone can bake.
But I have always loved eating baked goods and often order a nice cake whenever I go to a cafe. But recently, due to lockdown, all of the cafes have been closed. So I decided to give it a go. And thankfully I haven’t had many disappointing bakes yet.
As I am a good learner, I think I am doing quite well. So here I am sharing my recipes with you.
I came up with this banana cupcake recipe because I had some old bananas that were going off and decided to try and make some cup cakes. I hope you enjoy the recipe. Please comment below and let me know what you think about it.
Method
- Mix flour, sugar, baking soda, baking powder and salt. leave it aside once you done with it
- mash bananas in the separate bowl, add vanilla extract, butter and eggs and mixed well.
- pour flour mix into banana bowl and mix well until everything is combined
- pour the batter into cupcake cases about half way up
- bake in the oven 180'c fan for 25 to 30 minutes.
