Stuffed chicken breast

Serves: 2 people
Ingredients
- 2 chicken breasts
- Carrot cut into cubes - about 1 handful
- A few florets of broccoli cut into pieces
- A pinch of salt
- 1 teaspoon of white ground pepper
- Grated of cheedar cheese - about a handful
This recipe came up the other day when I was cleaning the fridge. I had a few carrots and broccoli left in the fridge, so I took out some chicken from the freezer and let it defrost to room temperature before I started cooking. I got the idea from the Chicken Kyiv (traditional food from Ukraine) because in the past I have bought frozen Kyiv to make quick and easy ‘in the oven meals’. I think its a delicious dish and not difficult to cook, so I decided to adapt it to my own recipe. Then I began my journey from Thailand to Ukraine for a day. Turned out it was good and I enjoyed it a lot, plus it’s easy for anyone to cook.
Let’s try this recipe, everyone.
Method
- Defrost chicken breast if you're using the frozen ones
- Use a sharp knife to cut the chicken breast in the middle through the side but not cut all the way through
- Now lay the chicken breast open on the chopping board and add some seasoning salt and pepper
- Use some clingfilm to put on top and flatten the chicken breast until it is thinner. Here I usually use a rolling pin to hammer it flat
- Remove the clingfilm and stuff the chicken with the cheese, carrot and broccoli.
- Wrap the chicken breast around the stuffing and cover with a bit of olive oil.
- Next, put in the oven 200'c for 20 minutes and then reduce the oven to 190'c for another 5 minutes
- Now all you need to do is eat it :-)
