Fried chicken with broccoli honey sauce

Serves: 2 people
Ingredients
- 2 chicken breasts
- half a head of broccoli
- 2 cloves of garlic
- 4 tsp of runny honey
- juice of 1 lime
- 30 g of peeled ginger
- a pinch of salt
- a pinch of ground white pepper
- water
- 2 tbsp of cooking oil
- 4 tsp of oyster sauce
Recently, I have been cooking healthier recipes and the other day I wanted to try out something different. So I had a look in my pantry to see what ingredients we had and then created a new recipe, which I thought was delicious.
So far the results have been very positive and, everyone said “Aroi Maak”, in Thai this means ‘very delicious’. I made it again today and it came out just as well as last time. I could share mine, but sorry, its all gone :). You will have to cook it yourself by following the method below. This dish works really well when you serve it with brown rice, so give it a try and let me know in the comments what you think. Go for it!
Method
- Add some water and a bit of salt to a sauce pan and 2 tbsp of cooking oil to a frying pan and put both on the heat
- Prepare chicken by slicing length ways of the chicken breast into 2 pieces so we will have 4 pieces in total.
- Now put the chicken breast in a food bag and bash it with a rolling pin until it gets nice and thin. This will allow the chicken to cook evenly and quickly.
- Once you done then, add some salt and ground white pepper to the chicken on both sides for seasoning
- Cut the broccoli into medium sized pieces.
- Chop the garlic and the peeled ginger and place in a pestle and mortar
- Add the runny honey, oyster sauce, lime juice and 2 tbsp of water into the mortar and mix the sauce together.
- Start to fry the chicken when the pan gets hot and cook it for 2 minutes each side.
- When the chicken is cooked halfway, put the broccoli into boiling water for 2 to 3 minutes or till it is cooked. Try to make sure the broccoli is not overcooked, you want it to have a bit of crunchiness
- Once the chicken is cooked then add the sauce from the mortar into the pan right on top of the chicken and continue cooking a few minutes to make our honey sauce thicken and turn darker in colour
- Serve by placing the broccoli first onto a plate and putting 2 chicken pieces on each dish. Finish by pouring the rest of the sauce over the top. It's now ready to serve - enjoy :)
