Stir-fried pork with Thai holy basil

Cooking time: 15mins
Serves: 2 people

Ingredients

  • 10-20 Thai holy basil leaves (take stems out)
  • 250g lean mince pork
  • 3 cloves garlic finely chopped
  • 4-5 Thai chilli's(you can do less chilli)
  • 100g long green beans, chopped fine
  • 2 tbsp fish sauce
  • 1 tbsp oyster sauce
  • 1½ tbsp cooking oil
  • pinch of sugar

Picture214_normalThere are many difference types of basil and its not always easy to understand which one to use. They all have very different flavours. For example, the Thai holy basil has a very unique fragrance and heat to the taste. Perfect for spicy dishes. Such as Pad Kaprao without the holy basil it will be totally different flavour. For me I like to add a lot of  basil in this because it make very strong flavour but be warn that here I found it’s very expensive to buy a small bunch. Let’s find out if you can bring out the right taste and basil.

Method

  1. Heat up the oil in a pan with high heat.
  2. Wait until the oil has heated up, then add the garlic and chilli, stir for 10 second bring out fragrance.
  3. Add the minced pork and mix up with garlic and chilli.
  4. When the pork is nearly done, place the fine green beans, and add the fish sauce, oyster sauce & a pinch of sugar. Stir for 2 mins.
  5. Turn the heat off, and add the Thai holy basil, keep it stir for a minute and serve with a nice fried egg on top.
