Pad Thai Recipe with Prawns

Cooking time: 30mins
Serves: 2 people

Ingredients

  • 150g rice noodle (put noodle in water first thing when you start cooking)
  • 10 Fresh prawns (take out black vein)
  • 1 Soya bean Tofu diced into cubes
  • 2 cups bean spouts (leave 1 cup for serving)
  • 4 Spring onions (cut into 1 inch and leave 2 for serving)
  • 2 shallots chopped
  • 3 garlic cloves - chopped
  • 2 tbsp finely chopped peanuts (bash with pestle and mortar)
  • 1 tbsp chilli powder
  • 1 cup veg oil (enough to make omelette and remaining for Phad-Thai)
  • 2 eggs
  • 2 slices lime (for garnish)
  • 3 tbsp tamarind sauce
  • 110 g palm sugar
  • 4 tbsp fish sauce

The Pad Thai Recipe is a very traditional dish and it seem to be very famous. Everyone who know Thai food most probably know Pad Thai. Even some travel blog say this is best Thai food dish you have to try. In fact it is also one of my favourite and I love to cook at home as often as possible.

You can find Pad Thai in most Thai restaurants in London but unfortunately it’s not easy to find very good sauce.

Well, I also don’t know the secret but my mum always teach me to cook and make sure I always taste it. If it come to your right taste I am sure everyone else will enjoy it too. Let’s try!

Method

Pad Thai Sauce

Start to heat up Tamarind sauce on a low heat and add palm sugar and fish sauce and keep stirring till it is all mixed. Turn to medium heat and keep string till it is a thick sauce then off the heat and let it get cold before cooking.
  1. Soak the noodles till its soft and drain the water.
  2. Make an omelet only use a little bit oil and slice it into thin strips. This will be for garnish on top once Phad-Thai is finished.
  3. Put remaining veg oil on to a medium heat using the wok, throw in shallots and garlic chopped till they turn golden and brown, now add the prawns and let it cook for 3 minutes.Pad Thai Recipe
  4. Put the noodles and soya bean tofu in and mix it well.
  5. Now it is time to add the sauce, stir in and make sure the sauce mixes well with the noodles, then throw bean spouts and spring onion, all flavour should be in the sauce already, make sure you keep tasting it and adjust your own taste.
  6. Turn off the heat and put the noodles on to a plate and decorate with omelette slices.
Serve with fresh bean spouts and chopped nuts, banana flowers if you have and extra chilli is optional. Please let me know if you have tried to cook this dish and if so how did it come out?
