Prawns in Tamarind Sauce

Serves: 2-3 people

Ingredients

  • 6-8 king prawns
  • 2 tbsp oil
  • 2 sliced Shallots
  • 1 red chillies (removed seed and sliced)
  • 1 tbsp finely chopped garlic
  • 1 tbsp tamarind paste
  • 1 tbsp palm sugar
  • 2 tbsp fish sauce
  • 1 egg
  • 3 tbsp plain flour
  • 1/2 cup cold water
  • 2 spring onions, sliced (green onion)
  • fresh coriander leaves, to garnish

Prawns in Tamarind Sauce is a popular dish in seafood restaurants in South Thailand. There is some restaurants in Rawai, Phuket, that you can buy the fresh Tiger prawns and seafood from the market and then you give to the restaurant to cook for you however you like to be done. So let’s follow the smell of seafood, for this dish it needs a medium size of the prawns.

Method

  1. Prepare 6-8 prawns, peel the shell leave the head and tails and remove the black vein. Now make a small cut on the prawns belly and pull down the tail through that small gap (see picture).
  2. Mix plain flour and egg with cold water, then add the prawns.
  3. Heat oil in wok until is hot then add slices of shallots to fry for 30 seconds or until it turns brown crispy and then remove from the wok for garnish later on.
  4. Add remaining oil in the wok and starting to fry the prawns until they are just starting to turn brown colour around 2 minutes.
  5. You can use the same wok for the sauce just remove the oil, only leave a little just enough to fry garlic.
  6. Fry the garlic till it turns brown, add tamarind water, palm sugar, red chilli and fish sauce and then add the prawns until the prawns are fully cooked and the sauce has slightly thickened, around 3 minutes.
  7. Transfer to a serving plate and garnish with the spring onion and coriander leaves and crispy fried shallots.
  8. Serve with Jasmine rice or fried rice.
